Guest guest Posted July 26, 2002 Report Share Posted July 26, 2002 * Exported from MasterCook * Asparagus and Pasta Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Pasta Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound asparagus 1 medium onion -- chopped 2 cloves garlic -- chopped 3/4 pound pasta 1 cup vegetable stock 2 tablespoons flour parmesan cheese parsley Blanch the asparagus for 2-3 minutes. Remove immediately and plunge into cold water. Cut the asparagus into 1/2 inch pieces after blanching. Sauté onion and garlic. Meanwhile boil and prepare pasta. Add the asparagus to the cooked onion and garlic. Cook on medium high for two minutes, add one cup vegetable stock with 2 tablespoons flour mixed in. Stir while sauce thickens. Drain pasta, add the pan with the asparagus and sauce. Stir while heating for another minute.
