12 ounces penne (pasta) -- to 16 oz

1 garlic clove (1-2) -- chopped or minced

28 ounces canned tomatoes with liquid

(or fresh peeled tomatoes, if preferred)

1 onion (1-2) -- chopped

2 cups chopped spinach (2-3)

1/2 teaspoon cayenne or red pepper flakes -- or double

If too dry, add another tbsp of water. Add tomatoes and simmer for 8-12 minutes.

Add pasta and toss. Serve immediately.
