Guest guest Posted July 26, 2002 Report Share Posted July 26, 2002 * Exported from MasterCook * Whole Wheat Pasta with Pine Nuts Recipe By :Neela Shukla, Toronto, CA Serving Size : 8 Preparation Time :0:00 Categories : 2002-07-26 Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound whole wheat spaghetti 1/2 cup sun dried tomatoes 1 cup finely chopped plum tomatoes 1 cup parmesan cheese -- (plus 1/2 cup, optional) 1 cup pine nuts (optional) 1 teaspoon canola or sunflower oil (optional) salt and pepper -- to taste ALTERNATIVE CHEESE: 1/2 cup ground almonds -- mixed with 1/2 cup nutritional yeast Cook pasta in boiling water to which 1 tsp canola or sunflower oil has been added. Drain well. Place the pasta in a pan (over a burner that is warm but not on). Add all the ingredients and toss well. Serve immediately.
