Pasta with Minted Pesto

Amount Measure Ingredient -- Preparation Method

1 cup packed mint leaves

1/2 cup fresh parsley

2 cloves garlic

2 tablespoons grated fat-free Parmesan cheese

2 tablespoons walnuts

2 tablespoons olive oil -- (2-3)

2 tablespoons vegetable broth -- (2-3)

Salt and pepper -- to taste

8 cups cooked pasta

 

Combine all ingredients except vegetable broth and salt and pepper in a blender

and process until smooth. Gradually add enough vegetable broth to make the

mixture spoonable. Season with salt and pepper and toss with hot pasta.

 

Makes 8 Servings
