Guest guest Posted July 26, 2002 Report Share Posted July 26, 2002 * Exported from MasterCook * Cactus Pear Vinaigrette Recipe By :Andy Boy Produce Serving Size : 8 Preparation Time :0:00 Categories : Cactus Pear Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 quarts mixed baby greens 1/2 red or yellow onion -- sliced thin 1 medium orange -- peeled and sectioned Cactus Pear Vinaigrette: (Makes about 1 cup) 2 fresh cactus pears 1/2 cup salad oil 2 tablespoons red wine vinegar 1/4 teaspoon salt 1/4 teaspoon dried tarragon leaves -- crushed Few grinds fresh black pepper Toss greens, onion and orange sections with about 1/2 cup dressing until greens are well coated. Add more dressing, if desired Cactus Pear Vinaigrette: Cut ends off each cactus pear. Cut a slit down side of each cactus pear. Starting at slit, gently pull off skin and discard. Cut fruit into chunks and put into blender container. Blend until smooth. Press through coarse strainer to remove seeds, then add cactus pear puree, oil, vinegar, salt, tarragon and pepper and blend to mix. Refrigerate any unused dressing for another salad. TIP - This luscious magenta-colored fruit grows on the side of a cactus leaf. Andy Boy's special blood red variety is juicy and has a flavor all its own, similar to a watermelon/pear flavor. Peel pears, slice and eat; the seeds are 100% edible and a good source of fiber. Of if you prefer, puree fruit and remove the seeds.
