Mushroom Lo Mein

TOFU AND MARINADE:

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon dry sherry

1 teaspoon sugar

2 garlic cloves -- minced

1 pound tofu -- diced

LO MEIN:

1 cup dried shiitake mushrooms

1 1/2 cups boiling water

1 pound Chinese egg noodles or linguine

1 tablespoon sesame oil

1/4 cup oyster sauce

or vegetarian stir fry sauce

1 tablespoon cornstarch

1 stalk broccoli with florets -- stem julienned

1 onion -- halved lengthwise, slivered

2 garlic cloves -- minced

2 teaspoons soy sauce

1 cup button mushrooms -- sliced

1 cup bean sprouts

 

1. Prepare Tofu and Marinade: In medium bowl, mix together soy sauce, oyster

sauce, sherry sugar and garlic. Add tofu, gently toss to coat and set aside.

 

2. Prepare Lo Mein: Combine shiitakes and water in small bowl and set aside to

soak. Cook noodles according to package directions until just tender. Drain and

toss with sesame oil. Set aside.

 

3. Slice shiitakes into narrow slivers, discarding tough stems; reserve 1 cup

soaking water. Combine soaking water, cup oyster sauce and cornstarch in small

bowl and set aside.

 

4. In large nonstick skillet (do not use cast iron) over medium-high heat,

combine broccoli, onion, garlic and 2 teaspoons soy sauce. Cook, tossing

constantly, until onion is limp and broccoli bright green, about 4 minutes.

Transfer to bowl and keep warm.

 

5. Combine shiitakes with button mushrooms in large skillet and cook, tossing

constantly, for about 4 minutes, until mushrooms are golden. Add tofu and

marinade and bean sprouts; mix well.

 

6. Add noodles and oyster-sauce mixture. Toss carefully. Bring to a boil and

boil until sauce thickens and is mostly absorbed, about 1 minute. Top with

broccoli and onions and serve at once.

NOTES : Meaty shiitake mushrooms give this vegetarian combination of noodles,

tofu, broccoli and Chinese flavorings a robust taste. The lo mein is flavored by

oyster sauce, a condiment that is derived from oysters. A vegetarian substitute

might be hoisin sauce, a Chinese barbecue sauce that will yield a completely

different, delicious result.
