Guest guest Posted July 28, 2002 Report Share Posted July 28, 2002 * Exported from MasterCook * Classic Green and Orange Lentil Salad Recipe By :Jacqueline Dunnington: Lentil Mania Serving Size : 5 Preparation Time :0:00 Categories : 2002-07-27 Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup cooked green lentils 1 cup cooked orange lentils 1/2 cup finely chopped celery 1 cup finely cut steamed green beans 1/4 cup chopped fresh parsley DRESSING: 1 Tablespoon mild mustard -- (prepared) Salt and pepper -- to taste 1 Dash lemon juice 1/2 cup reduced fat Italian dressing 1 ripe tomato -- cut into wedges 1/4 cup finely chopped chives 1 Small head of lettuce -- shredded In a salad bowl, mix cooked lentils, celery, green beans, and parsley. Combine dressing ingredients in a small bowl. Toss lentil mixture with dressing and serve on shredded lettuce. Garnish with tomato wedges and chives. Serve with crusty whole wheat bread.
