Creamy Rice & Mushroom Bake

2 tablespoons margarine

3 cups mushrooms -- (8 oz)

1 small onion

2 packages cream cheese

~ (3 oz pkgs)

2 large eggs

1 can lowfat evaporated milk -- (12 oz.)

~ (12 oz can)

~ NESTLÉ CARNATION brand

3 teaspoons dried parsley

~ OR 3 tbsp chopped fresh parsley

1 teaspoon salt

1/2 teaspoon pepper

3 cups rice

 

PREHEAT oven to 350 degrees F.

 

MELT margarine in large skillet over medium heat. Add mushrooms and onion;

cook, stirring occasionally, for 3 to 4 minutes or until mushrooms are

soft. Beat cream cheese and eggs in large mixer bowl until creamy. Mix in

evaporated milk, parsley, salt, and pepper. Stir in rice and mushroom

mixture. Pour into prepared casserole dish.

 

BAKE for 35 to 40 minutes or until set and light brown around edges.
