Peel parsnips; cut parsnips into Ian dice. Combine pumpkin, parsnip and garlic in large baking dish, lightly coat vegetables with cooking-oil spray. Bake, uncovered, at 450F about 30 minutes or until vegetables are light browned and tender. Sprinkle with combined margarine and breadcrumbs; toss through gently.
