Pumpkin and Parsnip Bake

1 1/2 pounds pumpkin

2 Large parsnips

1 garlic clove -- crushed

cooking spray

1 1/2 tablespoons diet margarine -- melted or softened

1 cup fresh breadcrumbs

 

Peel pumpkin, discard seeds, cut pumpkin into large dice. Peel parsnips; cut

parsnips into Ian dice. Combine pumpkin, parsnip and garlic in large baking

dish, lightly coat vegetables with cooking-oil spray. Bake, uncovered, at 450F

about 30 minutes or until vegetables are light browned and tender. Sprinkle with

combined margarine and breadcrumbs; toss through gently. Bake about 10 minutes

or until breadcrumbs are golden brown.
