Seame Noodles with Cucumber

2 ounces linguine

1 small garlic clove -- minced

1 tablespoon well-stirred tahini

1 scallion -- sliced thin

2 1/2 teaspoons fresh lemon juice

1 1/2 teaspoons soy sauce

1 tablespoon minced fresh parsley leaves

1/2 teaspoon honey

1 pinch cayenne

1 tablespoon water -- plus additional if necessary

1/4 cup peeled seeded chopped cucumber

1 tablespoon chopped unsalted peanuts

 

In a saucepan bring salted water to a boil for linguine.

 

In a bowl stir together garlic, tahini, scallion, lemon juice, soy sauce,

parsley, honey, cayenne, 1 tablespoon water, and salt to taste until

combined well.

 

Cook linguine in boiling water until tender and drain in a colander. Rinse

linguine briefly. Add linguine to tahini sauce with cucumber and toss,

adding additional water if necessary to thin sauce.

 

Divide noodles between 2 plates and sprinkle with peanuts. Serves 2. May be

doubled.
