Deep-Dish Apple Pies

2 MacIntosh apples -- (about 3/4 pound)

1 teaspoon fresh lemon juice

2 tablespoons sugar -- plus 1 teaspoon

1 teaspoon all-purpose flour

1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

1 packaged pie dough round

 

Preheat oven to 400 F.

 

Peel and core apples. Cut apples into 1-inch pieces and in a bowl toss

together with juice, 2 tablespoons sugar, flour, spices, and a pinch salt.

Divide filling between two 1-cup ramekins, mounding it.

 

Cut two 6-inch rounds from pie dough. Drape rounds over filling and press

edge to inside of ramekins, crimping dough. Brush dough with water and

sprinkle with remaining teaspoon sugar.

 

Cut a 1-inch vent in each crust with a sharp knife and bake pies in middle

of oven until filling bubbles and crust is golden, about 30 minutes. Makes 2

individual pies. May be doubled.
