Honeydew and Cucumber Salad with Sesame

Amount Measure Ingredient -- Preparation Method

1 tablespoon rice wine vinegar

2 teaspoons rice wine vinegar -- combined

1 tablespoon minced fresh gingerroot -- peeled and minced

2 teaspoons lite soy sauce

1 1/2 teaspoons sugar

1 teaspoon sesame oil

1/4 teaspoon dried hot red pepper flakes

2 tablespoons canola oil

1 cucumber -- seeded, thinly sliced (about 2 cups)

4 cups honeydew melon cubes -- (1-inch)

2 scallions -- minced

1 tablespoon sesame seeds -- lightly toasted and cooled

 

Whisk the first seven ingredients in a large bowl to blend. Add the cucumber,

melon, and scallions, toss the salad until combined well, and sprinkle with the

sesame seeds.
