Tomato Herb Salad

Amount Measure Ingredient -- Preparation Method

1 cup arugula -- chopped

1/2 cup fresh cilantro -- minced

10 large leaves fresh basil -- minced

1 cucumber -- thinly sliced

1 small jicama -- peeled and diced

or 2 cups diced water chestnuts

5 roma or Italian tomatoes -- thinly sliced

2 cups small cherry tomatoes -- cut in half

1 avocado -- diced

 

Toss all the ingredients together until well mixed.
