Guest guest Posted July 31, 2002 Report Share Posted July 31, 2002 * Exported from MasterCook * Strawberry Banana Fool Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup sliced fresh strawberries 2 tablespoons firmly packed brown sugar 1 teaspoon fresh lemon juice 1/2 cup sliced ripe banana -- (about 1) 1/2 cup well-chilled heavy cream 1/4 teaspoon vanilla Garnish: about 1/4 cup sliced fresh strawberries If ripe, sweet strawberries are out of season, feel free to substitute frozen (not in syrup). Partially thaw and drain the excess juice. Bananas may be used to garnish the top. In a heavy saucepan simmer strawberries, brown sugar, lemon juice, and a pinch salt, stirring, 5 minutes. In a blender or food processor puree strawberry mixture and banana. Transfer puree to a metal bowl set in a larger bowl of ice and cold water and stir until very cold. In another bowl combine cream and vanilla and set bowl in larger bowl of ice water. Beat cream until it just holds stiff peaks and fold into puree until just combined. Spoon fool into 2 stemmed glasses and chill at least 15 minutes, or until ready to serve. Garnish fool with sliced strawberries. Serves 2. May be doubled.
