Tiramisu Chocolate Wafer Cake

2 tablespoons mascarpone cheese or softened cream cheese

1 tablespoon sugar

1/3 cup well-chilled heavy cream

1 tablespoon grated semisweet chocolate

2 teaspoons strong brewed coffee

2 teaspoons rum or coffee liqueur

5 Nabisco chocolate wafers

 

Mascarpone, the velvety smooth, fresh cheese from northern Italy, adds

creamy sweet flavor to our chocolate cream. Cream cheese will also do the

job, but it is less sweet and more dense in texture.

 

In a bowl with a mixer beat mascarpone and sugar until smooth. Add cream and

chocolate and beat until mixture holds stiff peaks. in a small bowl stir

together coffee and rum (or liqueur) and brush onto wafers.

 

Sandwich wafers together to form a tower using about two-thirds cream

mixture. On a plate arrange tower on its side and spread remaining cream

over it. Chill cake, loosely covered, 30 minutes. With a sharp knife halve

cake diagonally. Serves 2. May be doubled to make 2 cakes.
