Guest guest Posted August 2, 2002 Report Share Posted August 2, 2002 * Exported from MasterCook * Italian White Bean Salad Recipe By :Linda Gassenheimer, Food Writer Serving Size : 2 Preparation Time :0:00 Categories : Beans Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon balsamic vinegar 1 tablespoon Dijon mustard 2 teaspoons olive oil 1 tablespoon water Salt Freshly ground pepper 1/4 small head romaine lettuce 1 cup rinsed and drained cannellini beans Mix vinegar, mustard, olive oil and water together in a salad bowl. Add salt and pepper to taste. (Or use 2 tablespoons bottled low-fat dressing.) Wash lettuce and tear into bite-size pieces. Add to bowl with beans; toss well. Approximate nutrition information per serving: 163 calories; 5.5g fat (30 percent calories from fat); no cholesterol; 8g protein; 26g carbohydrate; 6.5g fiber; 188mg sodium.
