Guest guest Posted August 4, 2002 Report Share Posted August 4, 2002 * Exported from MasterCook * Spelt Pasta with Peppers, Snow Peas and Red Curry Sauce Recipe By :Jack Bishop, Food Editor Serving Size : 4 Preparation Time :0:00 Categories : 2002-08-04 Pasta Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon Thai red curry paste 1 tablespoon low-sodium soy sauce 3/4 cup low-fat coconut milk 1 tablespoon roasted peanut oil 2 medium bell peppers (preferably one red and one yellow), 3 medium garlic cloves -- minced 1 tablespoon minced fresh gingerroot 3 ounces snow peas -- sliced thin (about 3/4 cup) salt 10 ounces spelt angel hair pasta 3 tablespoons chopped fresh cilantro leaves 1. Bring 4 quarts water to a boil in large pot. 2. Stem, seed and cut the bell peppers into 1 1/2- by 1/4-inch strips. 3. Whisk curry paste, soy sauce, coconut milk, and 1/4 cup water together in small bowl; set aside. 4. Heat oil in large, deep skillet over high heat until shimmering. Add peppers and stir-fry until soft, about 3 minutes. Reduce heat to medium, add garlic and ginger, and cook until fragrant, about 30 seconds. Add snow peas and curry paste mixture. Cover and cook, stirring once or twice, until snow peas are crisp-tender, about 3 minutes. 5. Meanwhile, add salt to taste and pasta to boiling water and cook until al dente. Drain pasta and add to skillet with sauce. Add cilantro and toss to coat noodles. Serve immediately.
