Guest guest Posted August 7, 2002 Report Share Posted August 7, 2002 * Exported from MasterCook * Marinated Cucumber-Tomato Salad Recipe By :La Juan Coward; Jasper, Texas Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup white vinegar 1/4 cup olive oil 1/4 cup sugar 2 tablespoons chopped fresh mint 1 1/2 teaspoons salt 1/4 teaspoon pepper 3 medium cucumbers ~ peeled & cut into 1/4 " slices 3 medium tomatoes -- cut into wedges 1 medium red onion -- thinly sliced Whisk together first 6 ingredients in a large bowl. Add cucumber slices, tomato wedges and onion slices tossing gently to coat. Cover vegetable mixture and chill at least 2 hours. Serve with a slotted spoon.
