Guest guest Posted August 7, 2002 Report Share Posted August 7, 2002 * Exported from MasterCook * Grilled Portabella Wrap with Pesto Salad ~2pts Recipe By :KP Slimmer Meals 2002 Hanneman Serving Size : 2 Preparation Time :0:00 Categories : KPSlim2 Sandwiches Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces portabella mushroom caps -- 1/4-inch slices olive oil spray garlic salt and black pepper 1 tablespoon prepared basil pesto 1 tablespoon apple juice or V8 2 ounces roasted red peppers -- diced 1 cup chopped fresh spinach or romaine lettuce 1 ounce lowfat pepper jack cheese -- grated or slivered 2 nonfat flour tortilla -- softened Preheat a ridged grill pan. Remove from heat and spray with olive oil. Return pan to burner; when hot, place mushrooms in the pan, season. Grill until tender (about 4 minutes per side over moderate heat). Meanwhile, dilute pesto with juice. Add diced roasted bell peppers. Season with salt and pepper. Add chopped spinach and toss to coat. Sprinkle cheese on a tortilla. Top with a portion of mushrooms. Top with the spinach-pepper mixture. Wrap and serve.
