Score eggplants lengthwise, just piercing the skin. Lightly oil the grill and heat to high. Grill eggplants until heated through (until the skin turns brown). Remove eggplants from heat and peel skin in strips along score lines. 2. In a bowl, combine grated ginger and soy sauce. (For a more intense flavor, let the ingredients marinate overnight.) 3. Cut grilled eggplant into round slices, about 1/2-inch thick. Spoon Ginger-Soy Sauce dressing over the pieces.
