Guest guest Posted August 8, 2002 Report Share Posted August 8, 2002 * Exported from MasterCook * Caribbean Grilled Vegetable Packets Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound sweet potatoes -- peeled and cut into 1/4-inch-thick slices 1 can black beans -- (19-ounce) rinsed and drained 1 banana -- thinly sliced 2 tablespoons fresh lime juice 2 teaspoons sugar 1/2 teaspoon salt 1 yellow summer squash -- thinly sliced 1 red onion -- thickly sliced 2 tomatoes -- thickly sliced 1/3 cup chili sauce 2 teaspoons olive oil 1/4 teaspoon freshly ground black pepper 3/4 cup shredded jalappeno jack cheese -- (3 ounces) WORKING TIME: 20 MINUTES TOTAL TIME: 50 MINUTES 1. In a medium pot of boiling water, cook the sweet potatoes until firm-tender, about 7 minutes. Drain well. In a medium bowl, toss the potatoes gently with the beans, banana, lime juice, sugar, and salt. 2. preheat the grill. Tear off four 24-inch lengths of heavy-duty foil, fold each in half to form a 12 x 18-inch rectangle, and spray with nonstick cooking spray. Spoon the porato mixture into the center of each sheet. Top with the squash, onion, and tomatoes. Drizzle the chili sauce and olive oil over and sprinkle with the pepper. Top with the cheese and seal the packets. 3. Place the packets on the grill, cover, and grill at medium, or inches from the heat, for about 20 minutes, or until the vegetables are piping hot and the squash is tender. Divide the packets among 4 plates and serve. Helpful hint: The chili sauce used here is not an exotic ingredient-it's the familiar spicy, tomato-based condiment sold in bottles next to the ketchup at the supermarket.
