Guest guest Posted August 9, 2002 Report Share Posted August 9, 2002 * Exported from MasterCook * Crunchy Vegetable Dip Recipe By :Dottie Miller - Jonesborough, Tennessee Serving Size : 0 Preparation Time :0:00 Categories : 1999 Snacks & Beverages The Best of Country Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package cream cheese (8 oz) -- softened 1 tablespoon mayonnaise 1 tablespoon lemon juice 1/2 teaspoon salt 1/8 teaspoon pepper 3/4 cup carrots -- grated 1/2 cup celery -- diced 1/2 cup cucumber -- diced 1/2 cup green pepper -- diced 1/3 cup green onions -- diced assorted crackers or bread In a mixing bowl, beat cream cheese, mayonnaise, lemon juice, salt and pepper until smooth. Stir in vegetables. Cover and refrigerate for 2-3 hrs. Serve with crackers or use as a sandwich spread.
