Crunchy Vegetable Dip

Amount Measure Ingredient -- Preparation Method

1 package cream cheese (8 oz) -- softened

1 tablespoon mayonnaise

1 tablespoon lemon juice

1/2 teaspoon salt

1/8 teaspoon pepper

3/4 cup carrots -- grated

1/2 cup celery -- diced

1/2 cup cucumber -- diced

1/2 cup green pepper -- diced

1/3 cup green onions -- diced

assorted crackers or bread

 

In a mixing bowl, beat cream cheese, mayonnaise, lemon juice, salt and pepper

until smooth. Stir in vegetables. Cover and refrigerate for 2-3 hrs. Serve

with crackers or use as a sandwich spread.
