In a medium mixing bowl, whip the soymilk, nutritional yeast, ground flaxseed and water mixture, salt, and cinnamon. Dip the each slice of bread into the soymilk mixture. Turn over with a fork so both sides are saturated. In a lightly oiled skillet, cook 3 minutes on each side. Serve with maple syrup.
