Unmeat Loaf

2 cups textured soy protein granules

1/2 cup ground flaxseeds

2 cups boiling water

---------------------

1 medium onion -- chopped (3/4 cup)

1/2 cup whole wheat flour

2 tablespoons tamari

1 tablespoon spicy mustard

2 teaspoons basil

2 teaspoons garlic powder

1/2 teaspoon salt

 

In a medium mixing bowl, combine the textured soy protein, flaxseeds, and

boiling water, and let rest for 10 minutes.

 

Preheat the oven to 350F.

 

Add the rest of the ingredients to the textured soy protein. Mix well with a

spoon or your hands. Press into a lightly oiled bread pan, and bake for 45

minutes. Let cool for 10 minutes before inverting to remove from the pan.

Slice and serve with mushroom gravy or salsa.
