Amount Measure Ingredient -- Preparation Method

1/2 pound soft silken tofu

3 tablespoons curry paste -- (commercially prepared)

2 tablespoons lemon juice

1 cup chopped cucumber

 

Combine the tofu, curry paste, and lemon juice in a food processor or blender

until smooth and creamy. Fold in the cucumber.
