Gingered Cashew Pesto

Amount Measure Ingredient -- Preparation Method

1 cup Cilantro leaves

1/2 cup Raw cashews

2 tablespoons Filtered water

3 tablespoons Lime juice

2 tablespoons Olive oil

1 tablespoon Garlic -- chopped

2 teaspoons Ginger root -- peeled and chopped

Cayenne and sea salt to taste

 

Wow! Tastes like butter but better. A creamy green pesto with a ginger kick.

 

Puree all of the ingredients in a food processor using a pulse chop motion.

Scrape down the sides once while making. Put into a small bowl. Refrigerate.
