Guest guest Posted August 19, 2002 Report Share Posted August 19, 2002 * Exported from MasterCook * Dijon Style Beets (with yogurt) Recipe By :James Barber—The Urban Peasant Serving Size : 4 Preparation Time :0:20 Categories : Vegetables Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 beets -- blanched and grated 1 tablespoon oil 1 teaspoon Dijon mustard 1 tablespoon ginger -- grated 1/2 medium onion -- grated 1 teaspoon salt 1 teaspoon pepper 1 teaspoon sesame oil 3 tablespoons yogurt 1 tablespoon yogurt -- as garnish 2 green onions -- chopped Fry beets in 1 tbs oil until they get coated with oil. Add dijon, ginger, onion, salt, & pepper. Cook until beets go soft. Add sesame oil. Add “cream” & heat (don’t overcook).
