This recipe was originally posted to the Veglife list by Karen Cook (don't know if she's on this list or not) in December of 1997. I remembered that I had a print copy of it (it was before I had MasterCook when I had to print out any recipe that I wanted to save,) so I just put it into MasterCook format and here it is. I have never tried it, but it sounds delicious and I figured since we're talking about wedding menus this would be a good recipe to send. I have no idea about the nutritional information - that would vary according to what cake mix you used and what ingredients were added, what kind of milk and cream cheese you used, etc. I suppose that MasterCook will fill in some nutritional information, but I suspect that it will not be very accurate. Although the directions didn't specifically say this, I am assuming that you are supposed to put the smaller cake on top of the larger one, to look more like a typical wedding cake. By the way, your menu sounds wonderful! Miriam * Exported from MasterCook * Hawaiian Wedding Cake Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 box yellow cake mix -- plus, eggs, oil & water called for 2 small boxes vanilla pudding 3 cups milk 11 ounces cream cheese -- softened 1 can crushed pineapple -- drained whipped topping shredded coconut Prepare cake mix as directed. Pour 2/3 of the batter into a 9 " X 13 " pan, and 1/3 into an 8 " X 8 " pan. Bake at temperature indicated on box. As the cakes bake and cool, mix pudding mix, milk and cream cheese together. Pour a layer of this mixture over the completely cooled cakes. Spread a layer of crushed pineapple over the cream cheese mixture. Spread a layer of whipped topping over the pineapple. Sprinkle the shredded coconut over the whipped topping. Store chilled.
