1 pound lentils -- cooked and drained

1 small onion -- diced

1/2 teaspoon crumbled sage

1/2 teaspoon minced garlic

1 Pinch dried oregano

1 Dash cayenne pepper

3 large potatoes -- cooked and unpeeled

1/2 cup hot soy milk -- (1/2-1)

Margarine -- to taste

Preheat the oven to 400°F. In a large mixing bowl, mash the cooked lentils

thoroughly and add the onion and seasonings. Put the lentil mixture in a lightly

oiled 2-quart casserole dish. In a separate bowl, mash the potatoes and add the

hot soy milk, margarine, and salt. Beat by hand or with an electric mixer, until

fluffy. Spread the mashed potatoes on top of the mashed lentils and bake for 20
