Guest guest Posted August 19, 2002 Report Share Posted August 19, 2002 * Exported from MasterCook * Cream of Broccoli Soup Recipe By :Debra Wasserman and Charles Stahler Serving Size : 2 Preparation Time :0:00 Categories : Debra_Wasserman Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound broccoli -- chopped 1/2 pound mushrooms -- chopped 1 small onion -- chopped 1 teaspoon tarragon 3 cups soy and/or rice milk Salt and pepper to taste Steam the vegetables and onion together for 10 minutes. Blend half of the steamed vegetables in a blender or food processor along with 1-1/2 cups soy and/or rice milk. Pour into a large pot. Blend the remaining steamed vegetables and soy and/or rice milk. Add to pot. Season with tarragon, salt, and pepper, and reheat for 5 minutes over medium heat. Add water if you prefer thinner soup. Serve warm.
