Simmer, stirring frequently, until very thick, about 10 minutes. Set aside. Combine the Emes Jel or agar powder with 1/4 cup of cold water in a blender. Let stand at least 3 minutes. Add 1 cup of boiling water and blend to mix. Add the cooked cornmeal, cashews, salt, lemon juice, grated carrot, and yeast if using. Cover and blend until totally smooth. (This is essential and will take several minutes.) Transfer to a covered container and chill until thickened, 2-3 hours.
