Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cup(s) strawberries -- chopped 14 oz canned pineapple -- water-packed, drained (use chunks or tidbits) 1 medium garlic clove(s) -- chopped 2 tbsp cilantro -- fresh, chopped 1 tbsp fresh lime juice 1 tsp sugar 1 serving cooking spray -- or enough to coat skillet 16 oz fat-free egg substitute 1/2 cup(s) fat-free milk 2 tbsp ground cinnamon 16 slice(s) reduced-calorie bread -- preferably whole grain Combine strawberries, pineapple, garlic, cilantro, lime juice and sugar in a medium-size bowl; set aside until ready to use. Coat a large skillet with cooking spray and heat over medium-heat. Combine egg substitute, milk and cinnamon in a large bowl. Dip bread into egg mixture, turn to coat and cook until slightly browned, 2 to 3 minutes per side. Serve topped with the strawberry salsa. Yields 4 pieces of French toast and about 1/2 cup of salsa per serving.
