Curried Tofu Stir Fry

Amount Measure Ingredient -- Preparation Method

10 5/8 ounces light firm tofu (or 1 package) -- in half-inch cubes

1 tablespoon olive oil

1 tablespoon crushed garlic

1 1/2 cups defatted vegetable broth

nutritional yeast flakes (optional) -- (see tip)

2 tablespoons curry powder -- or to taste

7 ounces Chinese baby corn -- (small can)

2 medium carrots -- sliced

2 stalks celery -- sliced

1 medium onion -- sliced

1 cup sliced mushrooms

cooked rice (optional) -- to serve

 

1. Add half of the oil to a hot wok, add garlic and tofu.

 

2. Stir-fry tofu until it is lightly browned and then remove from wok and set

aside.

 

3. Add remaining oil, stir in onion and cook until tender.

 

4. Add carrots and celery, stir at medium high heat for approx. 2 minutes or

until tender.

 

5. In separate bowl mix hot chicken stock and curry powder. Pour mixture into

wok and then add remaining ingredients.

 

6. Remember to keep stirring as you bring stir-fry to boil.

 

7. Immediately reduce the heat to medium low and simmer covered until all

vegetables are tender, stirring occasionally.

 

8. Stir-fry should take less than 15 minutes

 

VARIATION: replace tofu with garbanzo beans.

TIP - original recipe suggested chicken broth. Adding yeast to the vegetable

broth boost flavor.
