Guest guest Posted August 19, 2002 Report Share Posted August 19, 2002 * Exported from MasterCook * Portobellos with Collards and Cannelini Beans Recipe By :PCRM: physicians committee for responsible medicine Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 1/2 cups water 1/2 teaspoon salt 1/2 cup wild rice 1 cup long-grain brown rice 1 teaspoon olive oil 2 tablespoons reduced-sodium soy sauce 1 teaspoon thyme 1/2 teaspoon oregano 1/4 teaspoon black pepper 1 onion -- chopped 3 garlic cloves -- minced 1/2 pound Portabella mushrooms (2 large) -- thickly sliced 4 cups chopped collard greens (about 1/2 lb.) 15 ounces canned cannelini beans -- rinsed Bring water to a boil, then add the salt and wild rice. Cover and simmer 15 minutes. Add the brown rice, then cover and simmer until the rice is tender, about 45 minutes. Drain off any excess water. While the rice is cooking, prepare the mushrooms. Mix the oil, 1 tablespoon of the soy sauce, the thyme, oregano, and black pepper with 1/4 cup of water in a large nonstick skillet. Add the onion, garlic, and mushrooms. Cover and cook over medium-high heat, stirring occasionally, until the onion is soft and the mushrooms are browned, about 5 minutes. Reduce the heat to medium and add 1/4 cup of water and the collards. Sprinkle with the remaining 1 tablespoon of soy sauce. Cover and cook until the collards are tender, 6 to 8 minutes, then stir in the drained beans. Cover and cook 1 to 2 more minutes. Serve over the cooked rice.
