Hot and Sweet Pepper Relish

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 sweet red pepper -- seeded and finely chopped

1 medium red onion -- peeled and finely chopped

2 jalapeño peppers -- seeded and finely chopped (2 to 3)

1 tablespoon lime juice

1/2 teaspoon salt

 

Combine all ingredients in a medium bowl. Stir well to combine. Cover and

refrigerate.

 

Yield: About 2 cups.

 

 

This relish will keep for up to a week in the refrigerator, so having it on hand

can be a big timesaver.

 

Be careful when chopping the jalapeño peppers. Wear plastic gloves, or be sure

to wash your hands well after handling, especially before touching your eyes! It

also helps to touch only the outer part of the pepper while chopping.

NOTES : Try the relish on your veggie burger or burrito, or mix a spoonful into

your salad dressing. For a spur-of-the-moment salsa, just combine ¼ cup of

relish with 2 finely chopped fresh tomatoes. A tablespoon or two of chopped

cilantro will add even more flavor.
