Guest guest Posted August 23, 2002 Report Share Posted August 23, 2002 the color was odd but interesting. good flavors. * Exported from MasterCook * Chickpea Apple Salad with Blackberry Vinaigrette Recipe By :KP Slimmer Meals 2002 Hanneman Serving Size : 2 Preparation Time :0:00 Categories : KPSlim2 Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- DRESSING: 1 tablespoon blackberry syrup or puree 2 tablespoons pineapple or mirin vinegar 1/2 lemon -- juiced salt pepper 1 1/2 tablespoons extra virgin olive oil SALAD: 2 cups mixed salad greens (mesclun) with spinach -- (or more) 4 ounces canned garbanzo beans -- rinsed 4 ounces sliced mushrooms 2 green onions with tops -- diced 2 tablespoons chopped fresh basil 1 medium red delicious apple -- cored, diced Combine the syrup, vinegar and lemon juice. Add a pinch of salt and pepper. Whisk in the oil. Set aside. Combine the salad ingredients -- waiting to cut the apple last. Whisk the dressing again. Drizzle about half on the salad and toss to coat. Chill both salad and extra dressing until serving. Serve; offer the extra dressing on the side. NOTES : Musky chickpeas and crisp sweet apple make this salad interesting: the apples were diced the same size as the chickpeas. We enjoyed the freshness of the blackberry vinaigrette. We liked this a lot more than that supersweet raspberry dressing. The basil may seem odd, but it worked well as a sharp surprise. This combination salad was better than expected and we will do this again. Downside: the color shouts " Different! " It also said " Special. " Nutr.
