Indian Vegetable Pilau

Amount Measure Ingredient -- Preparation Method

5 tablespoons butter or margarine

2 onions -- chopped

1/2 teaspoon cinnamon

1 teaspoon grated fresh ginger root

4 cups diced mixed vegetables--potato, sweet

potato, peas, carrots,green or red bell

pepper, cauliflower, green beans,

zucchini, chickpeas,etc.

2 1/2 cups basmati rice -- (or any long-grain rice)

1 teaspoon turmeric

4 cups water

1 teaspoon salt

1/2 cup raisins

 

Heat the butter or margarine in a large pot and cook the onions until they are

golden. Add the cinnamon and ginger, stir, then add all the vegetables, rice,

and turmeric. Cook this business over medium heat for about 5 minutes, stirring

frequently. Add the water and salt and bring to a boil. Turn the heat down very

low, cover the pot with a tight-fitting lid, and cook 20-25 minutes, until all

the water is absorbed.

 

Fluff the pilau with a fork and add raisins. Dump it into a greased casserole

and bake, covered, at 350ºF for about 20 minutes.
