Mexican Meltdown

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 onion -- chopped

4 green onions -- chopped

2 jalapeno peppers -- (to 3)

1/2 medium sweet red pepper -- chopped

2 medium tomatoes -- peeled, seeded & chopped

2 cloves garlic -- squished

1/4 cup whipping cream -- or table cream

4 cups shredded Cheddar cheese

OR Monterey Jack cheese

2 tablespoons all-purpose flour

1 teaspoon ground cumin

salt & pepper to taste

 

Heat the olive oil in a large skillet over medium heat. Add chopped onion,

green onions, chopped jalapeno peppers, and red peppers, and cook, stirring,

until the onions are soft, 6-8 minutes. Stir in tomatoes and garlic and let

simmer for 5 minutes, until tomatoes begin to soften. Stir in cream.

 

Meanwhile, toss the cheese with the flour and cumin, then add to the tomato

mixture in the skillet. Season to taste. Cook just long enough to melt the

cheese.

 

Serve warm with tortilla chips for dipping.
