African Peanut Soup

Amount Measure Ingredient -- Preparation Method

1 tablespoon vegetable oil

2 onions -- chopped

2 carrots -- chopped

4 cups vegetable broth

1/4 cup white rice -- raw

1/2 cup smooth peanut butter

1/2 teaspoon hot pepper sauce

salt to taste

 

Heat the oil in a large saucepan over medium heat. Add the onions and carrots

and cook, stirring until the onions are soft (8-10 minutes). Add the vegetable

broth and bring to a boil. Cover the pot, then lower the heat to a simmer and

cook for 20 minutes.

 

Dump the soup into a blender and blend until smooth. Pour the soup back into the

pot, add the rice and cook covered for 15 minutes until the rice is soft. Stir

in the peanut butter, the hot pepper sauce and salt to taste. Heat through and

serve. Makes four servings.

NOTES : If you think that peanut butter should only be seen in a sandwich, think

again. The peanut is a legume, and probably has more in common with a kidney

bean than it does with a walnut or an almond. If you need more convincing, try

this soup.
