Guest guest Posted August 26, 2002 Report Share Posted August 26, 2002 * Exported from MasterCook * Baked Macaroni Casserole Recipe By :Evelyn Raab Serving Size : 4 Preparation Time :0:00 Categories : Pasta Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small onion -- chopped 5 1/2 cups elbow macaroni -- (uncooked) 1 cup cubed cheddar cheese 1 cup water 1 teaspoon salt Pepper -- to taste 28 ounces diced tomatoes -- canned 1 cup bread crumbs 1 tablespoon butter Place all ingredients but butter and bread crumbs in greased casserole dish. Stir well. Cover and bake at 350 degrees for one hour. Meanwhile, melt butter in small skillet over medium hea. Add the bread crumbs and cook, stirring for 8 to 10 minutes, until the crumbs are lightly toasted. After casserole has baked for one hour, remove cover and sprinkle the crumbs on top. Broil for 3 to 5 minutes until browned. Makes 4 servings. This recipe is adapted from " The Clueless Vegetarian " by Evelyn Raab (Firefly Books, 2000.)
