Guest guest Posted August 26, 2002 Report Share Posted August 26, 2002 * Exported from MasterCook * Zesty Tomato Soup Recipe By :Brian Johnson Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 3 cups onions -- roughly chopped 1 tablespoon orange zest 2 tablespoons garlic -- minced 1 tablespoon cumin 1 teaspoon basil 1 teaspoon crushed red pepper 5 pounds stewed tomatoes -- (canned) 1 1/2 pounds crushed tomatoes -- (canned) 1 1/2 pounds tomato paste 1/2 gallon vegetable stock Heat oil in a large stock pot over a medium flame. Add the onion, orange zest and garlic and saute for 5 minutes or until the onions are translucent. Add all the dry seasonings and saute for anther minute. Add the vegetable stock and all tomato products. Reduce the heat to a simmer and cook for 30 minutes. Remove from the heat and let cool. Once the soup has cooled puree in a blender until smooth. Return to the heat cook for anther 10 minutes over a low flame. This variety of tomato soup is punched up with the zest of orange and the dry spice cumin, the combination of these flavors together makes for a dynamite tomato soup. I fist discovered this recipe out of a cooking magazine and have modified it to my liking, it is great with a rustic loaf of bread. Nutr.
