Watermelon Gel

2 pounds watermelon

~ 2 to 3 lbs) or enough

~ to make 2 cups juice

1/4 cup sugar

3 tablespoons cornstarch

2 ounces bittersweet chocolate -- slivered

3 tablespoons pistachio nuts -- unsalted

~ skinned & coarsely chopped

1 pinch ground cinnamon

 

Remove the rind from the watermelon and cut the fruit into chunks. Put

through a food mill or press through a sieve to get 2 cups of liquid without

seeds.

 

Combine the watermelon juice, sugar, and cornstarch in a saucepan, and stir

until the cornstarch is completely dissolved. Bring to a boil and let cook

for 4 to 5 minutes, stirring constantly, or until the mixture thickens. Let

cool. Add the chocolate slivers and stir. Refrigerate until very cold. Spoon

into dessert goblets. Garnish with chopped pistachios and dust with

cinnamon.
