Broil, close to heat for 8-10 minutes, turning after 5 minutes. Coat a 11 " X 13 " baking pan with non-stick spray and 1 1/2 cups of the pasta sauce. Cover sauce with eggplant slices; sprinkle feta cheese over eggplant. Add tofu slices and mushrooms. Cover with remaining eggplant and pasta sauce. Sprinkle with grated cheese. Bake in 375F oven for about 50 minutes, cover with foil for last 10 minutes. Serve with green salad and ciabatti bread. TIP: You can substitute tomato sauce, 1 tablespoon minced garlic, and 1/2 teaspoon crushed red pepper flakes for the pasta sauce. TIP: You can substitute drained, crumbled tofu mixed with 1 teaspoon minced garlic.
