Guest guest Posted August 30, 2002 Report Share Posted August 30, 2002 I found vegetarian oyster sauce at a health food market * Exported from MasterCook * Chinese Broccoli Mushrooms with Oyster Sauce Recipe By :COLE'S COOKING A TO Z by Annette Gooch, syndicated Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 dried shiitake mushrooms 1 pound chinese broccoli or broccolini 1 tablespoon oyster sauce -- (vegetarian) 1 tablespoon light soy sauce 1 teaspoon cornstarch oil -- for stir-frying 1 teaspoon minced ginger In a small bowl, cover dried mushrooms with lukewarm water and soak for 30 minutes or until tender. Trim bases from broccoli. If using Western broccoli, cut off tops and separate into florets; slice stems across into 1/4-inch pieces. If using the slender Chinese variety, simply cut the whole bunch into 1-inch lengths. Drain mushrooms, reserving soaking liquid. Remove and discard the tough stems; slice each cap into 1/4-inch-wide strips. Combine oyster sauce, soy sauce, and 2 tablespoons of the reserved mushroom liquid in a small bowl. Add cornstarch and stir to dissolve. Heat wok and add oil. Heat oil almost to the smoking point. Add ginger and cook until fragrant, 5 to 10 seconds. Add broccoli and mushrooms; stir-fry until broccoli is almost tender but still crunchy. Stir oyster sauce mixture and add it to the pan. Cook 2 minutes, stirring to coat vegetables evenly with sauce. Servings: 4 to 6 with other dishes. tip - Oyster sauce is a thick, brown seasoning liquid used in southern Chinese cooking.
