Mildred's Daughters' Russian Kale

Amount Measure Ingredient -- Preparation Method

1 medium onion -- sliced

2 tablespoons extra-virgin olive oil

2 garlic cloves -- chopped (2-3)

2 bunches russian kale -- (2-3)

16 ounces canned cannellini beans -- drained

2 tablespoons balsamic vinegar

 

Saute onion in olive oil until translucent, about 3 minutes. Add garlic and

saute another 30 to 45 seconds. Add washed and coarsely cut-up kale and cook

until wilted. Add drained beans and stir until the mixture is heated through.

Drizzle with balsamic vinegar.

 

Servings: 4 as a side dish.

NOTES : Home cooks know what to do with cukes and peppers, but may be shy about

trying kale, collards, and mustard greens. This delicious and easy recipe comes

from Barb Kline and Randa Shannon of Mildred's Daughters' Urban Farm in

Pittsburgh. The garlic flavor will not be harsh when it is cooked, so try using

more rather than less. Serve the beans and greens as a side dish with grilled

fish or meat.
