Smoky Three-Bean Salsa

Amount Measure Ingredient -- Preparation Method

1 15.8-ounce can black-eyed peas -- rinsed and drained

1 15-ounce can black beans -- rinsed and drained

1 16-ounce can navy beans -- rinsed and drained

1 small sweet onion -- finely chopped (about 1/2 cup)

1 green bell pepper -- finely chopped

2 small garlic cloves -- minced

1 14 1/2-ounce can diced tomatoes -- undrained

1/2 cup chopped fresh cilantro

1 chipotle pepper in adobo sauce -- minced*

1/4 cup fresh lime juice

1/4 teaspoon salt

 

Combine all ingredients in a large bowl; cover and chill at least 2 hours.
