Guest guest Posted September 2, 2002 Report Share Posted September 2, 2002 * Exported from MasterCook * White Bean Gazpacho Recipe By :Lorna Sass Serving Size : 4 Preparation Time :0:10 Categories : Short-Cut Soups {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 15 ounce canned organic navy beans 1 small garlic clove 2 teaspoons sherry or red wine vinegar -- plus more to taste 14 1/2 ounce canned diced tomatoes with green chilies -- see tip 1 cup diced cucumbers (Kirby) -- see tip salt -- to taste hot red pepper sauce (tabasco) -- to taste In a food processor, puree the organic beans with their liquid, (see tip), the garlic, and 2 teaspoons vinegar until very smooth. If you're using fresh tomatoes, add half of them plus the diced jalapeno at this point. Transfer to a bowl. If using canned tomatoes. stir those in at this point; or stir in the remaining fresh tomatoes. Add the cucumbers, and a bit more vinegar if needed, to give the soup a slight acid edge. Add salt and hot pepper sauce, to taste. Serve chilled. TIP - If you're NOT using organic beans, drain and rinse them. Substitute 1/3 cup tomato juice for the canned bean liquid. TIP - If you can find them, use Kirby (pickling) cucumbers. They are smaller, denser, and more flavorful than the large waxed supermarket variety, and their unwaxed skins don't require peeling. TIP - Replace the canned tomatoes with 1 1/2 to 2 cups seeded and finely diced plum tomatoes plus 1 jalapeno, seeded and diced. TIP - If using fresh tomatoes you may need to thin the soup slightly with canned tomato juice or water. VARIATION: Roasted Red Pepper Gazpacho: Puree 1/3 cup diced roasted red pepper along with the beans. Proceed as directed in the recipe. VARIATION: Herbed White Bean Gazpacho: Stir in 1 tablespoon rosemary or basil olive oil at the end, or drizzle a bit over each serving. In this unorthodox version, pureed white beans create a low-fat soup that nevertheless seems rich and creamy. If you plan ahead ad chill the canned beans and tomatoes (preferably organic), you won't even have to chill the finished soup. Nutr.
