Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 cup Arrowhead Mills Quick Brown Rice

1 1/2 cups water

1/4 teaspoon salt -- (optional)

These instructions are for the Arrowhead Mills brand, which is better

tasting and more economical than any other brand I've tried. According to

the chart on the package, its nutritional profile is roughly equivalent to

that of regular brown rice.

Quick Brown Rice cooks up fluffy and a bit dry, so this product works best

when served with a soupy topping like curry or chili, or a stew that has

lots of sauce.

Combine the rice, water, and salt (if using) in a medium saucepan. Bring

to a boil. Reduce the heat to medium and boil, uncovered, for 10 minutes.

Remove from the heat and let stand, uncovered, for 2 mintues. Fluff up

and serve.

Yield:

" 2 cups "
