Basic White Rice

2 cups water

1/2 teaspoon salt

1 cup extra long-grain white rice

 

In a medium heavy saucepan, bring the water and salt to a boil. Stir in

the rice and return to a boil. Reduce the heat and simmer, covered, until

all the liquid has been absorbed, 18 to 20 minutes. Fluff up before

serving.

 

Coconut Rice: Add 1/3 cup unsweetened dried grated coconut along with the

rice and use an extra 1/4 cup of water.
