Stir in the rice and return to a boil. Reduce the heat and simmer, covered, until all the liquid has been absorbed, 18 to 20 minutes. Fluff up before serving. Coconut Rice: Add 1/3 cup unsweetened dried grated coconut along with the rice and use an extra 1/4 cup of water.
