In a wide-mouthed jar, combine the Tamari, mustard, maple syrup, and 2 tablespoons lemon juice. Shake well. Taste and add enough additional lemon juice to give the sauce a distinct puckery edge. Refrigerate for up to 1 week. Note: Leftovers will need to be perked up with additional fresh lemon juice, and sometimes you'll need to add more lemon juice once you've tossed the dressing with salad ingredients.
